Emiliana is more than just a name...
It’s the story of ice cream made differently - slowly, carefully, with full attention to detail. It’s the story of our family, making ice cream for over 60 years - from Zagreb, to Bol, to Split.
We opened Emiliana in Split in 2019.
No one makes ice cream the way we do. Literally – no one.
We use traditional batch freezers, which work slowly and incorporate very little air – just like in the old days. We don’t use modern “mantecatori” machines that pump out large volumes quickly at the cost of texture and taste.
Our process is long, demanding, and hands-on.
Every flavor is made daily, in small batches. We never use industrial bases or chemical stabilizers. We bake our cones ourselves, by hand. Every detail is under our control.
This way of working gives our ice cream a unique creaminess, natural color, and depth of flavor that you’ll recognize instantly. That’s what makes Emiliana different.
